Friends, this is another super simple, quick recipe…I’m rather fond of those. I stumbled upon it without much planning or preparation, and it ended up being very tasty! Tim can attest to that. It’s clean as can be (though not raw, which is always a fun bonus) and loaded with protein! It would be a great meal after a big workout. Here it is, folks- enjoy!
1 can black beans
1 can corn
2 cups lentils
approx. 2 cups spinach
1 cup diced tomatoes
Prepare lentils according to package. Season to taste.
Sauté spinach on stovetop, seasoned to taste.
Prepare corn and black beans according to package.
Add corn, black beans, lentils, and tomatoes to pan. Stir, serve, and enjoy!
