2 Ingredient Breakfast Cookies

You guys. These are real! And clean. And amazingly yummy. And beautifully simple and quick to make. I guess I’m pretty drawn to simplicity when it comes to recipes… If its healthy, tastes good, and fast… Give it to me! In this case, its a fun bonus that I get to say I’m eating cookies for breakfast!

The Only Ingredients: 

2 large bananas

2 cups oats

Optional Add-In Ideas:

Dried cranberries (that’s what I did!)

Cinnamon

Vanilla extract

Chopped nuts of any kind

Raisins

Milk or dark chocolate chips

 

 Instructions:

Preheat oven to 350 degrees F.

Blend oats in food processor until they become the consistency of flour.

In a large bowl or food processor, combine mashed bananas with oats until smooth. Add in half a cup or so of your favorite add-in. I used dried cranberries and it was delicious!

Spray baking sheet with nonstick spray. Drop dough in large tablespoons onto cookie sheet and flatten with a rubber spatula (these cookies do not naturally flatten in the oven. Learned that the hard way, as you can see!).

Bake 9-12 minutes or until cookies are set.

Remove, let cool, and enjoy!

Makes 12-16 cookies.
